Fortune Cookies

These are really, really good! However, they are somewhat challenging to make. Please do enjoy them.

You will need:
Griddle
Shortening
Pastry Brush
Teaspoon
Small bowl
Fork
Tablespoon
Pancake turner
1 plate
1 or 2 muffin tins

Ingredients:
1 egg
1/3 cup sugar
1/3 cup all purpose flour
3 tablespoons vegetable oil
2 tablespoons water
1/2 teaspoon vanilla
1/4 teaspoon cinnamon

Instructions for making the cookies:

  1. Heat the griddle over medium heat and, using the pastry brush, generously grease the hot griddle with shortening.
  2. In a small bowl, beat the egg with a fork until foamy. Beat in sugar until light and fluffy. Stir in the flour, oil, water, vanilla, and cinnamon. Mix until smooth.
  3. Drop tablespoonfuls of the batter onto the greased griddle. Spread the batter into circles using the back of the spoon. The cookies need to be very thin.
  4. Cook about 3 minutes, until they are light brown. Then turn the cookies with a pancaked turner and cook them for about 3 minutes on the other side.
  5. Lift the cookies onto a plate. Once they are not too hot to touch, place a paper fortune in the center of each cookie and fold the cookie in half. Then hold the edges of the cookie in half and draw it gently down over the edge of a muffin pan to crease it in half again. Fit the cookie into the muffin pan, ceased side down, to hold its shape until cool.
